Chinese Stir-Fried Eggplant with potato and green peppers(地三鲜DiSanXian)

First of all, I have to apologize for not having posted any new recipe since a very long time! I’ve been pretty busy these past 6 months with my last year undergraduate studies, but now I am on holidays and will definitely make it up with all of you by posting as many new recipes as I can!Chinese stir-fried potatoes with eggplant and green peppers, simply known as DiSanXian(地三鲜)is one very popular as well as easy vegetarian recipe. The name DiSanXian means “The Three Fresh Vegetables of the Earth”. This chinese easy recipe is a stir-fry recipe consisting of eggplant, potato and green bell peppers.

Chinese Stir-fried Potatoes with eggplant and green peppers

Ingredients:
1 medium potato, peeled and sliced thickly
1 green pepper, cut in medium-sized squares
1 eggplant, cut in slices
2 cloves garlic (optional)
1 tsp cornstarch
1 tsp light soya sauce
salt
1 tsp sugar

Steps:
1. Heat some oil in pan. Fry the potatoes until brown.
2. Add the eggplant and fry until brown. Cover and let cook over medium heat.
3. Add salt, mix well and cover again for about 3-4 minutes, occasionally mixing.
4. Add the green pepper, mix and cover. Cook over low heat for about 3-4 minutes.
5. Add light soy sauce,sugar and some water. Add to the mixture.
6. Check that all vegetables are well cooked, then add the cornstarch mixed in little water and garlic (optional).
7. Serve!
