
This is a very easy indian vegetarian recipe with eggplant, potatoes and onions as the 3 main ingredients. It can be served as a side-dish to a meal or you can have it by itself with rice. When I am feeling lazy to cook, I just make this dish and it is so quick and easy to do! So, if you are like me (lazy but hungry), just add this recipe to your collection of quick recipes! I use fried onions here because I wanted to give the dish this nice fried onions flavour.
Note:
- Cut your eggplant and potato into small cubes. Smaller cubes mean they will cook faster!
- You can fry your onions to get the fried onions, or if you are in a real hurry, just use readily-made fried onions from the grocery store.
Simple Indian Eggplant Potato with Fried Onions recipe
Ingredients:
1 medium eggplant, cut into small cubes
1 medium potato, peeled and cut into small cubes
1 medium onion, thinly sliced (or 1 cup of fried onions)
1/4 tsp garam masala
pinch of turmeric powder
2 tbsps coriander leaves, chopped
salt to taste

Steps:
1. Add turmeric powder, pinch of salt to potato cubes in a bowl. Mix to coat the potatoes well with the spices.
2. Heat 2 tbsps oil in a non-stick pan over medium heat. If using already-made fried onions, proceed to step 4. Otherwise, go to step 3.
3. When oil is hot, add the onion slices and fry until they are dark-brown. Remove and set aside.
4. In the same pan, add potato cubes and fry for about 5 minutes, stirring frequently so that the potato gets evenly cooked.
5. Add the eggplant pieces, 1/4 tsp salt, mix and cover. Cook for 5 minutes over medium heat.
6. Uncover, add 1/4 cup of water and mix again. Cover and cook for another 5-10 minutes until potatoes and eggplant are well cooked.
7. Add garam masala, mix. Check for salt and add as needed.
8. Add fried onions and mix well. Garnish with some chopped coriander leaves and serve.

So interesting…I love potatoes, eggplants, and onions, but I have never combine these into one dish! Indian spice is great idea for these ingredients too! I have to try these combo soon. I’m still impressed. Didn’t come up with that 3 combo… Thanks!
