
Mixed vegetable curry is a simple vegetable curry recipe. There are pumpkin, potatoes, french green beans, zucchini and tomatoes. How the idea came to me? I don’t know how, it just came. As a student, I often feel very lazy to cook I have to find ways to optimize my time and resources. So, I try to find quick and fast recipes and this vegetable curry came to life. Personally, it tastes best with indian bread or rotis.
Mixed Vegetable Curry Recipe
Ingredients:
1 zucchini, cut into very small cubes
1 tomato, chopped finely
1/2 onion, chopped finely
2 cloves of garlic, finely chopped
small piece of ginger, finely chopped
2 potatoes, cut into medium sized cubes
1-2 cups of pumpkin, cut into cubes (depends on you, I like pumpkin so I put lots)
handful of french green beans, cut about finger-size
1 cup of frozen peas
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp turmeric powder
1 tsp garam masala
1 green chili, chopped finely
yogurt(optional)
salt
Steps:
1.Heat oil in a pan. Add the cumin seeds and mustard seeds.
2.When they start to crackle, add the onions and fry until translucent.
3.Add garlic, ginger, green chilli, turmeric powder and french green beans.Fry for about 4-5 minutes.
4.Add the potatoes and fry for a further 5 minutes.
5.Add the zucchini and tomatoes. Add a cup of water, salt and cover for about 5 minutes, taking care not to burn.
6.Add the frozen peas and pumpkin. Cover and cook for a further 5 minutes. Add water if needed.
7.check if all the vegetables are well cooked, especially the potatoes and green beans. If not, continue cooking.
8.When all the vegetables are well cooked, add little yogurt and garam masala. Cover and simmer for 1-2 minutes.
7.Serve!

I rarely use ginger powder, but ginger powder would do just fine.
