My mom has this daily routine which she never misses: “What do you want to eat today?”. If one of us says steak or roasted chicken, I go “Mashed potatoes!”. I absolutely love, love, love my mom’s creamy mashed potatoes recipe. It’s so much better than buying the instant ones in boxes. We tried once, I didn’t like it, natural is always the best
Anyway, you will simply adore her mashed potatoes recipe! I’ve been doing some research online and it seems that Yukon Gold potatoes are the best for making creamy mashed potatoes. Otherwise, just use the potatoes you can get your hands on (like me
). It’s a really simple, quick-and-easy recipe!
Creamy Mashed Potatoes Recipe
Ingredients:
3 potatoes, washed and cut into half
salt to taste
pepper to taste
1/2 tsp thyme leaves
1/2 cup of milk
50g butter
cheese to taste
Steps:
1. Boil the potatoes in water with 1 tsp of salt. Cook until potatoes fall apart when a fork is poked through. It usually takes about 15-20 minutes.
2. Remove the potatoes from the water and peel off the skin. Mash the potatoes using a fork.
3. Heat some butter in pan over low heat. Add the thyme leaves and when fragrant, add the mashed potatoes.
4. Add the butter and mix until it melts.
5. Gradually add the milk and mix so that the mixture absorbs the milk. You will find the mashed potatoes becoming “silkier”.
6. Add the salt and pepper to taste.
7. Add the cheese ( as much as you want, I like to add lots of cheese
). Mix and allow the cheese to melt.
8. Done!
