
Among the various indian snacks recipes that I adore is definitely fried eggplant pakora. Actually, I had absolutely no idea about how to call it in English as in Mauritius, we simply call it gato brinzel. Back in home, we usually these pakoras along with bread or rice or just like that. I personally love eating them with french bread
Spread butter inside the bread, then place some hot gato brinzel and enjoy with the butter inside melting due to hot pakoras. Eat with a mug of homemade milk tea…hmmm…delicious!
AND easy to make! Here’s the quick recipe.
Fried Eggplant Pakora Recipe ( Gato Brinzel Mauritian Recipe)
Ingredients:
1 long eggplant
2 cups of flour
1 tsp turmeric powder
oil for deep-frying
salt
Steps:
1.Cut the eggplant in slices.
2.Add a pinch of salt + the turmeric powder to the flour and mix in water a little at time until a medium-thick paste is obtained. Not too runny not too thick.
3.Heat the oil in a pan. Medium heat.
4.Place the sliced eggplant in the flour mixture, coating each slice evenly with it.

5.Check if oil is hot enough by placing a dry chopstick in. Bubbles should be seen at the end of the chopstick.
5.Carefully put in each of the coated slices and deep-fry until both sides are golden brown.
6.Drain on kitchen paper.
7.Serve!

Re. “I don’t know what to call it in English”:
In the US, everyone uses the Indian name “Eggplant Pakora”. But, if you wanted a kind of translation … when the eggplant is shredded, mixed in to the batter and dropped by the spoonful in to the hot oil, you could call it a “fritter” …. when the eggplant is cut in rounds, you could call it “battered and fried sliced eggplant”.
I love these, but my local restaurant only makes them for Ramadan. I am looking forward to trying your recipe. Thank you.
