Cucumber Raita

Raita is an Indian condiment based on yogurt and minced raw vegetables like cucumber, onion, tomato or carrot can be mixed into the yogurt, along with coriander, mint, spices and other herbs. Raita is always served chilled and is usually served along with spicy dishes as it may cool the palate. One favorite raita recipe is cucumber raita. It may stored in the fridge for up to 2-3 days.

Cucumber raita recipe

Ingredients:
1 cucumber, peeled, seeded and grated
2 cups of thick yogurt
1 tbsp chopped coriander leaves
2 tbsp chopped fresh mint
1 tomato, chopped
1/2 tsp white sugar
1/4 tsp kosher salt (or up to taste)
1/2 tsp cinammon powder
1/2 tsp cumin powder

Steps:
1. Squeeze out the water from the grated cucumber.
2. Add all the ingredients into the beaten yogurt and mix well.
3. Serve!
