Vegetable Pilaf


Pilaf is known as pilau, pilav, pilaff, plov or pulao in different countries of the world, and there are hence various delicious pilaf recipes. This recipe is actually one very “lazy” vegetable rice pilaf recipe. It doesn’t require much time and energy, which is the reason I love it so much. This rice pilaf recipe is a very simple one and also quite nutritious. I didn’t have basmati rice at that time, so I just used plain rice. If you cook it with basmati rice, the flavour and taste will be much better of course.

Vegetable Rice Pilaf recipe

Ingredients:
3-4 cups of rice, soaked for 15 mins and drained
1 bunch of spinach leaves, washed and cut
1 medium carrot, grated
1 medium potato, cut in cubes
1/2 onion, chopped
2-3 cloves of garlic, chopped
1 small piece of ginger, chopped
1 cup of green peas
1/4 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp cumin powder
1-2 bay leaves

Steps:
1. Heat oil in a non-stick pot, add the bay leaves. Fry the onions, ginger and garlic until brown.
2. Add the spices, salt and the spinach leaves. Fry until the leaves wilt.
3. Add the grated carrot and the potatoes. Fry for one minute.
4. Add the rice with the green peas and mix.
5. Add hot water until it just covers the mixture. Cover and cook until rice is done.
