Masala egg curry

Cooking indian food is one of my favorite hobbies. I like experimenting with any kind of indian spice, and the rich colour of indian dishes greatly appeals to me. This egg curry recipe is an easy indian recipe. A perfect dish for a simple and quick lunch.

Egg curry recipe

Ingredients:
5 boiled eggs
1/4 medium red onion, sliced
3 cloves of garlic
1/4 size of index finger ginger
3 red chillies (the amount depends on your taste)
2 medium tomatoes, chopped
coriander leaves
salt
1 tsp garam masala
1 tsp turmeric powder

Steps:
1.Blend the garlic,ginger and chillies to a paste.
2.Heat oil in a pan and fry the sliced onions until golden brown.
3.Add the garlic-ginger-chillies paste and fry until golden brown.
4.Add the spices and salt. Fry for a minute.
5.Add the tomatoes and fry until almost dry.
6.Add the boiled eggs and mix.
7.Add some water, reduce flame and let simmer for another 5-10 minutes.
8.Garnish egg curry with coriander leaves and serve with hot rice.
